Two Methods, Two Completely Different Results

Walk into any modern health food store and you will find both cold-pressed juices and blended smoothies marketed with broadly similar health claims. On the surface, both involve processing fruits and vegetables into a drinkable form. The result is a thicker, more filling drink that digests more slowly. This has specific advantages:

Here is where the science becomes counterintuitive. Cold-pressed juice โ€” despite lacking fibre โ€” often delivers certain nutrients with *higher bioavailability* than blended smoothies.

Bioavailability refers to the proportion of a nutrient that actually enters systemic circulation and reaches target tissues. In whole foods and smoothies, nutrients must be released from the plant cell matrix during digestion before they can be absorbed. The scientific literature does not declare a universal winner between cold-pressed juice and blending โ€” because they serve different functions. A 2020 review in Nutrients concluded that both forms of fruit and vegetable consumption produced beneficial effects on cardiovascular markers, antioxidant status, and inflammatory biomarkers, with cold-pressed juice showing superior bioavailability for certain phytonutrients and blending showing superior satiety and blood sugar stability.
